# Directions:

01 - Preheat the oven to 425°F and line a large sheet pan with parchment paper or foil.
02 - Whisk together olive oil, lemon zest, lemon juice, garlic, oregano, thyme, parsley, salt, and black pepper in a small bowl to create the marinade.
03 - Pat tilapia fillets dry and place them on one side of the prepared sheet pan; brush generously with the lemon-herb marinade.
04 - Toss green beans with olive oil, salt, and black pepper in a mixing bowl and arrange them in a single layer on the opposite side of the sheet pan.
05 - Roast in the preheated oven for 18 to 20 minutes until tilapia is opaque and flakes easily with a fork, and green beans are tender-crisp.
06 - Garnish with chopped fresh parsley and serve alongside lemon wedges.

# Expert Tips:

01 -
  • Everything cooks on one pan, so cleanup is almost nonexistent and you can actually relax after dinner.
  • The lemon marinade soaks into the fish and keeps it incredibly moist without any fuss.
  • Green beans get crispy edges and stay bright green, which makes the whole plate look restaurant-quality.
  • You can have this on the table in thirty minutes flat, even on your most chaotic evenings.
02 -
  • Do not overcrowd the pan or the fish will steam and the green beans will turn limp instead of roasted.
  • If your fillets are thicker than usual, add a few extra minutes to the cooking time and check with a fork to make sure they flake easily.
  • Always line the pan with parchment or foil because the lemon juice can stick and make cleanup a nightmare.
03 -
  • If your green beans are thick, slice them in half lengthwise so they cook at the same rate as the fish.
  • Add a pinch of red pepper flakes to the marinade if you want a subtle kick of heat.
  • Use a meat thermometer to check that the tilapia reaches 145 degrees in the thickest part for perfect doneness every time.
